Eggroll in a bowl

I absolutely LOVE egg rolls. But when you are watching your waistline you need to find a alternative. This is it!

This is absolutely delicious and is on our menu once a week if not twice! It is a super simple with just a few ingredients and suer fast to make.

Perfect when you are hungry and in a pinch.

What you will need:

1 pound ground turkey

1 package of dry coleslaw mix

Ginger (I use the tube of already ground in refrigerated products section at my grocery store)

Low sodium soy sauce

5 cloves of garlic

Green onions for garnish.

Instructions:

Brown ground turkey in a large skillet. While browning mix Ginger, diced garlic and soy sauce in a small bowl. Set aside.

Once turkey is no longer pink and has a nice color add dry coleslaw mix.  Sauté until cabbage starts to wilt. Add soy sauce mixture and toss together. Serve and top with green onions. Sometimes we serve over brown rice.

Super simple and super easy. I promise you won't miss the deep fried wrap on this one!

Bbq chicken wraps

Everyone loves to eat with their hands. And these make for a great finger food!

What you will need:

Wraps (You can use a tortilla, or even lettuce)
Chicken tenders, about a pound.
BBQ sauce (use your favorite!)
Salt & Pepper to taste
1 pkg dry Coleslaw mix
Olive oil.

Instructions:

Season chicken tenders with salt and pepper. Coat a large skillet with olive oil. Cook chicken in olive oil until no longer pink. While Chicken is cooking, pour BBQ sauce into a medium sized pot. turn on low. You are just heating the sauce through.
I usually will start to warm the wraps up at this point. But, you can use them cold too.

Once chicken is cooked thoroughly place into warmed BBQ sauce. Make sure to toss the tenders around to coat them evenly.

Now for the fun part, Plating it and eating it!

Take a warmed, or cold, wrap and place one or two tenders on it. Depends on the size. Top with coleslaw mix wrap and eat!
There is a variety of things my family will do with these. I didn't include it in the original recipe, because these are all optional.
Sometimes they will use Blue cheese dressing as a added topping. Or a squeeze of lime juice. We are all foodies and always creating!

Paleo taco. You won't miss the shell!

These are simply amazing and a must try for everyone!

Makes 4 servings

What you will need:

2 large sweet potatoes

1 pound of ground turkey

1 Package of taco seasoning (or you can make your own)

Lettuce & Tomato for garnish

Green salsa (I made my own, Store bought is fine)

What you do:

Bake sweet potatoes until tender. While baking brown ground turkey , once no longer pink add package of taco seasoning according to package  directions. Set aside.

Chop lettuce and tomato.

Remove sweet potatoes from oven, slice in half. Use a fork to loosen up the inside. Push the meat of the potatoes over to around the edges of skin. Crating a opening for your taco fillings. Add a a healthy amount of taco meat to potatoes, top with lettuce, tomato and salsa!

Turkey Chili

There are a lot of versions of this, but, I like mine the best! And I always make a big pot because leftover are even better!

What you will need:

2 pounds ground turkey

1 28 ounce can petite diced tomatoes

1 28 ounce can of Tomato Sauce

about 1 and a half cups of chicken broth. More if needed.

1 Large egg plant

1 Large green bell pepper diced 

1 Large red bell pepper diced

1 medium onion diced

1 stalk green onions

3 stalks of celery diced

1 lg carrot diced

3 close of garlic minced

2 Tbsp chili powder (more if wanted)

1 tbsp cumin (more if wanted)

Salt & Pepper to taste.

 

What you do:

I usually prepare all of m veggies in advance. So get to dicing!

Brown ground turkey with onion, garlic, Carrot and celery add cumin and chili powder.  Stir. Add chicken broth...let simmer for about 5 mins. give it a taste and add salt and pepper as needed. (you will want to taste it in about a hour, so keep it near by!

If it's passed the taste test then I toss in all of the veggies. Along with the canned tomatoes and tomato sauce. Add more chicken broth if needed. (At this point you can add to a slow cooker on low) Give it a stir and turn the heat to low cover and simmer for about a hour. This is when you will want to taste it for seasoning. 

Add what you want, sometimes the cumin and chili powder need to be adjusted here as well. A little more never hurt anyone.

Cover and simmer another 30 mins (The longer the better).

Serve  garnish with green onion and enjoy!

 

 

Buffalo Chicken lettuce wraps

Crockpot recipes come in handy when you have a busy day. Your family will love this one!

What you will need:

Boneless skinless chicken breast (5)

A Jar of Buffalo wing sauce

1 Med onion

3 Cloves of garlic

Salt& pepper to taste.

Shredded carrot for garnish

3 Stalks of celery diced

A good blue cheese dressing

Lettuce (you can use whichever you'd like.)

What you will do:

Place chicken breast in crock pot. Sprinkle with salt and pepper. toss in domed onion and garlic and pour in the bottle of wing sauce.

Cook on low for 6-7 hours.

When done pull chicken out, shred with fork and place back into sauce and mix to re coat chicken.

Place a healthy serving of chicken onto lettuce leaf drizzle with blue cheese dressing and top with grated carrot and diced celery, Roll up and enjoy!
